Sophi's
Green Pita Snack



Ingredients:
1 hard boiled egg, shredded
1/2 celery stalk, fine dice
1/2 c. of Spinach
1.5 tbsp Hummus
1/4 tsp dijon mustard (sub regular mustard if you don't have dijon)
1 whole wheat pita pocket
1/2c. unsalted dry roasted soy beans
1 /4tbsp minced garlic

For a Full Serving, add:

1/2 c. Cottage Cheese
3 strawberries, large dice

Preparation
PREHEAT oven @ 350
**Note: Egg may be cooked ahead of time and cooled in refrigerator. AND Edamame beans may be baked and chopped ahead of time and cooled and refrigerated as well**

-In a bowl, add Edamame, minced garlic, and a sprinkle of salt and pepper.. Add just    enough Olive Oil to coat mixture for a good browning when toasting in oven.
-On a sheet pan lined with aluminum foil, place the edamame mix and spread evenly. -Toast in oven for 20 minutes, let cool and chop it up! (Like chopping bacon bits)
-In a small pot, add water just enough to cover egg. Boil. Once boiling, remove from heat and cover with lid for 7 minutes. **Have a bowl of iced water to place egg once ready to avoid it cooking any longer).  
-Meanwhile, wash celery, chop celery (fine dice).
-When egg has cooled, peel and shred it with a shredder, then combine it in a small bowl with celery, Hummus, spinach, toasted edamame bits, and dijon (or mustard sub). Mix thoroughly.
-Fill one toasted Pita with egg mixture.
-Serve Pita with fresh strawberries and cottage cheese.
