What Fresh Means


As our food supply has been transformed by industrialization, the question of freshness has become much more urgent. Once, even city dwellers lived near the farms that grew our food. No longer. Now it comes from all over the planet. Do we really think that this change has no effect on food's quality, or on our ability to know or control what we're eating? Do we have any idea of the conditions under which it was grown and picked and handled? No. Do we know anything about the quality of the soil and air and water where it grew? No. And all these factors are important -- these are the things that nournished our food before it arrived on our kitchen tables to nourish US.

Me: Today, we don't even get the nutrients we need from the plants that we eat. Don't even get me started with the animals we eat that eat CORN and their own POOP. Did you know that once a fruit is separated form its stem it starts losing nutrients??? Imagine receiving something from the other side of the planet?? THIS IS WHY LOCAL FARMERS' MARKETS ARE IMPORTANT!! We have DEVOLVED into a walking ball of fake food and useless calories. Start paying attention to the food you eat because essentially, its what you're made of....
